Game day · Fall

Game-day fried chicken.

Fried chicken on game day is 2 for 2. At least the two I got pictures of. December 23, 2018: fried chicken in my kitchen, and the Seahawks beat the Chiefs 38 to 31. October 25, 2026: fried chicken again, and the Seahawks beat the Chiefs 20 to 3. I'm not saying my kitchen won either game. I'm not saying it didn't.

Ingredients

The simple batch. I season by feel, so use as much as you like.

  • Chicken pieces
  • Morton Nature's Seasons
  • Cajun seasoning
  • Garlic powder and onion powder (a little extra)
  • All-purpose flour (unseasoned)
  • A few tablespoons buttermilk powder (my secret)
  • Oil for frying
  • A few whole jalapeños (optional)

Method

  1. Season. Nature's Seasons, Cajun seasoning and a little extra garlic and onion powder on every piece. Let it sit about an hour.
  2. The flour. I don't season my flour. I stir a few tablespoons of buttermilk powder into it instead.
  3. Paper bag toss. Chicken in, flour in, shake until every piece is coated.
  4. Fry. Medium heat, until deep golden and cooked through (165°F inside). Drop a few jalapeños into the oil too.
  5. Rest. On a rack, so the bottoms stay crisp. Serve by halftime.
Buttermilk powderSometimes I put it in the marinade instead of the flour. Either way it gives that buttermilk tang without the wet dredge.
The jalapeñosInspired by @keith_lee125's Church's Chicken taste test. I missed that jalapeño juice on my chicken.
