Make ahead · Thanksgiving

Cream soups, from scratch.

I don't ever have to buy another can. I used Campbell's my entire life, and last year, when they were going through their PR crisis, I was confused and didn't really know what to do. So I just made them myself. Thanksgiving 2025 was my first year without canned cream soups, and the fresh ones made such a difference.

Cream of mushroom

Makes about 3 to 4 cups. Double it if you're stocking the freezer.

  • White mushrooms, chopped, to taste
  • 1 small fresh onion, chopped, and 2 cloves fresh garlic, minced
  • 2 tbsp butter and 2 to 3 tbsp all-purpose flour
  • 2 cups chicken or vegetable stock
  • ½ to 1 cup heavy cream, half-and-half or milk (I had all three, so use what you have)
  • A splash of sherry
  • Pepper and other seasonings, to taste

Cream of chicken

  • 4 tbsp butter
  • ½ cup all-purpose flour
  • 2 cups chicken broth or stock
  • About 1 cup heavy cream (or milk, use what you have)
  • ½ tsp each salt, onion powder and garlic powder, or to taste
  • ¼–½ tsp black pepper, or to taste

Method

  1. Mushroom: the base. Sauté the mushrooms and onion in butter until tender and golden, then add the garlic.
  2. The roux. Stir in the flour and cook about 2 minutes.
  3. Stock. Pour in the stock and simmer until thick.
  4. Finish. Stir in the cream, then the sherry and pepper. I left mine chunky because it was going into my cornbread dressing. Blend some if you want it smoother.
  5. Chicken. Melt the butter, whisk in the flour, then slowly whisk in the broth. No sauteed vegetables on this one. Once it thickens, whisk in the cream and season it your way.
  6. Store it. Cool, portion and label. Jars are fine for the fridge. For the freezer, move it into a different container first.
FreezingI used about half of what I made and froze the rest. The only thing I did wrong was freezing it in the mason jars. They were really hard to deal with when I was ready to use them, so transfer yours to a different type of dish first. Best within 2 to 3 months. Thaw overnight in the fridge, not on the counter. It may separate a little. Warm it gently and whisk it back together. In dressing or a casserole, you won't notice.
Don't toss the extrasThe leftover mushrooms and prep went into my kitchen-extras soup all week.
